I can't believe another week has come and gone....let alone we've survived the first quarter of TWENTY-ELEVEN!!! Time flies by so fast, especially the older I get. I haven't shared with y'all everything that's been happening in our neck of the woods....but I won't do that today....I'll save it for a more serious post. Because.....today.....is SATURDAY....and it's all about sweet treats!!!
I love sweets....waaaaay too much!!!
I know that I'm a carb-aholic....
....but aren't most girls?!?!
A little of a sweet treat ain't gonna hurt any of us....remember the key word is....moderation!!!
Of course sometimes I don't remember the definition of moderation!!!

Anyway....here's this weeks tasty treat!!!
Chocolate Eclair Cake
2 packages of graham crackers
(not 2 boxes....2 "sleeves")
2 (3 ounce) packages instant vanilla pudding mix
3 cups milk
1 (8 ounce) container frozen whipped topping, thawed
1 (16 ounce) package prepared chocolate frosting
2 (3 ounce) packages instant vanilla pudding mix
3 cups milk
1 (8 ounce) container frozen whipped topping, thawed
1 (16 ounce) package prepared chocolate frosting
Line the bottom of a 9 x 13 pan with graham crackers. In a large bowl, combine pudding mix and milk.
Stir well. Stir in whipped topping to pudding mixture. Spread half of mixture over graham cracker layer. Top with another layer of graham crackers and the remaining pudding. Top all with a final layer of graham crackers and frost with chocolate frosting.
Refrigerate until serving.
Beware....this is sooooo easy....you'll be tempted to make it way too often....and eat way too much!!!

This is my daughter's favorite dessert. So easy to make but totally delicious. I don't make it often because I can't stay out of it. I do make it with sugar free pudding and fat free whipped cream. Still delicious!
