Happy Friday, Everybody!!!Are you all as glad as I am that it's F-R-I-D-A-Y???
This week....well, let's just say it's been very, very hectic!!!
And, I've been one tired puppy almost every day!!!
So....I'm glad it's Friday....plus....Pappy is on vacation next week!!! YAY!!!!Are we going somewhere???
Probably not...not with our economy the way it is, and only one of us actually bringing home any moolah!!!
But....we do have day passes to Dollywood...so we might just do that one day...especially since we have a big day coming up next Wednesday....
more on that later!!!
Anyway...here's one of my very favorite recipes...I love this pie!!!
Most of the time I make it "key lime"...but, I've also made it using raspberry gelatin and yogurt, and it's delish, too!!!
This just seems like a nice spring-time dessert....low cal....and low points, if you're on WW!!!

- 1 box (0.3 oz) Lime flavored gelatin, sugar-free
- 1/4 cup Water, boiling
- 2 containers (6 oz each) Key Lime Pie-flavored light yogurt
- 1 container (8 oz) frozen whipped topping, fat-free, thawed
- 1 9" prepared Graham cracker pie crust, reduced-fat
1. Dissolve gelatin in boiling water.
2. With wire whisk, stir in yogurt
3. With wooden spoon, fold in whipped topping.
4. Transfer mixture to crust. Refrigerate overnight, or at least 2 hours.
5. Slice and serve into 8 pieces: garnished with thin lime slice, if desired.

ReplyDeleteKey Lime pie is good, especially if you find a good recipe down in FL and use fresh lime. Makes your lips smack similar when eating lemons.
ReplyDeleteP.S. I know, maybe I can't see your pic through all my grays, which are much longer!!!!! I just thought it was interesting that gray hair shows up in the Gods Word!
This looks like a great new recipe to try for my husband. He has lost almost 60 in a year on WW and I am always looking for new recipes! My first visit and I enjoyed it!
