Since I've been sick this week, I haven't had much of an appetite....did I just say that??? I'm not sure those words have ever came out of my mouth....very, very, very seldom in my life have I had times that I couldn't eat....if God would just see fit to allow it to stay this way.
But...I bet it returns and probably will come back with a vengeance!!!
And...when it does...I'll probably be ready to eat several of these delicious little treats.

1 (8 oz cream cheese)
1/2 Cup butter, softened
1 Cup flour

Mini Pecan Tarts
1 (8 oz cream cheese)
1/2 Cup butter, softened
1 Cup flour
Mix together and shape into small balls and chill
Filling:
Filling:
1 Egg
3/4 Cup brown sugar
3/4 Cup brown sugar
1 Tablespoon butter
Dash of salt
2/3 Cup chopped pecans (go ahead and use 1 cup!!!)
1 Tablespoon Vanilla flavoring
Place small balls in mini muffin tin and press into the middle of the ball to make a crust.
Pour filling into each cup and bake 25 minutes at 325 degrees.
