What a week!!! It's gone by fast, probably because I've had something that I've had to do every day this week. One of the things that I had hoped to do didn't happen, though.....

I was a bit disappointed, to say the least....plus....I was stuck with 3 dozen cookies....I gave some to Jess and The Dad...Pap took some of them to work with him...and yes, I ate a couple...or three...or ten!!!!
Since I already had my basket decorated, all ready to hopefully win first prize for my presentation...I thought I might as well share my cookie recipe with you all!!!

Rolo Cookies
2 1/4 Cups Plain Flour
1 Teaspoon Baking Soda
1 Cup Sugar
1 Cup Butter, Softened
2 Teaspoons Vanilla
2 Eggs
9 ounce package of Rolo candies
(I need to say that I couldn't find a package of Rolo candies, just the rolls of candy...so, Pap found milk chocolate caramel cups at Wally World and that's what I used)
Preheat oven to 350. Beat sugars and butter until light and fluffy. Add eggs and vanilla and beat well. Add flour and baking soda and blend well. Chill dough in refrigerator for at least 3 hours. Roll 1 tablespoon of dough in palm of hand to form a ball. Press Rolo into ball, covering it completely. Flatten bottom of cookie into palm of hand and press the other side into a mixture of 1 cup of chopped nuts mixed with 1 tablespoon of sugar. Place cookies, nut side up, on an ungreased cookie sheet and bake for 9 minutes (it took longer for mine...I placed each cookie into a muffin tin lined with a paper cup)

They are really good warmed in the microwave for just a few seconds....just long enough to melt the chocolate and caramel in the center of the cookie!!!

they were delicious, and your presentation looked great. . .hopefully, i can use my presentation next year. next february, i'd like to have a valentine's day cookie/candy exchange at my home!
